Chef Phillip Halff is offering a seasonal, multi-course dining experience at Cibo Kitchens on Main Street in Frisco. The bimonthly event, known as Chef’s Table at Halff Culinaire, takes place twice a month and features intricate dishes that blend high culinary technique with familiar comfort food elements.
One signature course reimagines a classic sandwich using a white macaron, lettuce mayonnaise, and a bacon jam patty, presenting a savory contrast to the expected sweetness of the pastry.
Halff describes the dining concept as an invitation rather than a formal obligation. He notes that traditional tasting menus often feel stiff and uninviting, requiring strict dress codes and rigid service. In contrast, his approach focuses on the mindset of a host cooking for guests in a home setting, rather than a chef serving customers in a large commercial kitchen.
This philosophy is reflected in the casual yet detailed presentation of the food, which Halff says shifts diners' expectations by offering unexpected textures and flavors.
The chef’s path to this venture began with a background in marine biology before he attended the Culinary Institute of America. After graduation, he worked in the Dallas culinary scene, including a role at the now-closed Blind Butcher, where he progressed from dishwasher to sous chef under the mentorship of Oliver Sitrin.
Halff credits Sitrin with teaching him to prioritize common sense over rigid adherence to culinary texts. He met his wife, Ann, in 2015 at The Old Crow, and the couple now collaborates on the dining experience.
