The State Fair of Texas is serving more than new combinations of familiar fried foods this opening week. Its 2026 food expansion also brings new concession businesses onto the grounds, giving visitors a reason to look beyond their usual stops.
The fair, which opened Sept. 25, lists four new vendors and four new concepts from returning operators. Among the newcomers is HGG Tanghulu, operated by Sijie Lu in the Tower Building. Its specialty is fresh fruit enclosed in a crisp sugar coating. The fair identifies the business among this year's additions, rather than a returning concession with a renamed dish. That distinction matters for a food-focused visit: a new vendor can introduce a different style of snack, while an established operator may be testing a new format elsewhere on the grounds.
Tracy's Long Fries, on Martin Luther King Jr. Boulevard, is one of the new concepts. Its menu combines long, Asian-style fries and toppings with separate snacks such as Deep Fried Ranch. Another addition, Yumi's 3D Fruit Ice Cream, uses fruit-shaped chocolate shells for mango and peach offerings. The published price for that item is seven coupons.
